Holly originally opened a donair stand after studying French cooking in Vancouver. Now, Wafflebeast is going on two years old at the far end of the Victoria Public Market. For Holly, her business is her ultimate creative workshop. She views the store as a set that comes alive everyday with her acting as director and cook by turns. As an artistic person, Holly thinks that cooking is the best way for her to share her creativity. Despite the very long hours and the challenges of being a single mom, she knows that she has put everything she has into her dream.
Holly has found a supportive community among the other vendors at the Market. In particular, the women who run small businesses understand the unique challenges that she has faced. Whether it is offering business advice or sampling the food, this community continues to guide and motivate Holly.
